•• I am a HUGE pastry and coffee fan ✨ These breakfast cookies definitely fill that pastry craving for me ~ they are made with wholesome ingredients, natural sweeteners, and offer a boost of fiber (from the oats).
INGREDIENTS
– 1 cup gluten-free oats
– 1/2 cup almond flour
– 1/2 cup almond butter (or peanut butter)
– 1/2 tbsp cinnamon
– 1/4 cup pure maple syrup
– 1/4 cup dark chocolate chips
– Pinch of salt (for topping)
STEPS:
1. Preheat the oven to 350F
2. In a bowl, mix together all ingredients.
3. Line a pan with parchment paper and form dough into cookie shapes (makes about 6 cookies).
4. Top each cookie with a pinch of salt.
5. Bake at 350F for 12 min (or until bottom is golden brown). Let rest for 10-15min before eating.
