Caramel made with medjool dates // dairy-free and gluten-free
If you’re looking for a fun, festive, and naturally sweet treat this Halloween, these Ghost-Shaped Caramel Treats are perfect!
🎃 What You’ll Need
- White chocolate (for lining and topping the molds)
- 2 cups pitted dates
- ½ cup soy milk
- 1 tsp vanilla extract
🕯️ How to Make Them
- Prep the molds:
Melt your white chocolate and spoon a small amount into each ghost-shaped mold. Use the back of a spoon or a brush to evenly coat the sides and bottom. Pop the molds into the freezer for a few minutes to set while you make the caramel. - Make the date caramel:
Soak the pitted dates in warm water for about 15 minutes to soften. Drain the water, then blend the dates with soy milk and vanilla until smooth and creamy. The texture should be thick and luscious — like traditional caramel, but naturally sweetened! - Assemble:
Take your molds out of the freezer and spoon the date caramel into each one, leaving a little space at the top. Pour a layer of melted white chocolate over the caramel to seal them up. - Freeze:
Freeze for at least 30 minutes, or until completely set. Once solid, pop your little ghosts out of the molds and get ready to snack!
