Stuffed Peanut Butter Dates

I know I’m a little late to the game when it comes to trying these “snicker” inspired stuffed dates, but better late than never! I will say, they are way better than I was expecting, so definitely worth a try ๐Ÿ™‚

These make for such a great nutrient dense snack – why? Let’s breakdown the main ingredients โคต๏ธ

Dried Dates
  • Supports Digestion: high in fiber
  • Aids in Bone Health: source of calcium, magnesium, and phosphorous
  • Heart Healthy: good source of antioxidants and may lower cholesterol levels
Peanut Butter
  • Increases satiety (feeling of fullness): good source of protein and fiber
  • Aids in Muscle Repair: good source of protein
  • Supports Blood Sugar Control: good source of protein, fiber, and healthy fats
  • Heart Healthy: good source of healthy fats

Stuffed Dates Recipe @servingsofnutrition

Ingredients:
  • Dried Dates (I used Good & Gather Pitted Dates)
  • Nut Butter of your choosing
  • Optional toppings: melted chocolate, sea salt, crushed nuts, coconut flakes
Steps:
  1. Prep the Dates: Slice each date lengthwise on one side to open them up. Remove the pit.
  2. Stuff with Peanut Butter: Use a small spoon or butter knife to fill each date with about 1/2 to 1 teaspoon of peanut butter.
  3. Add Optional Toppings: Sprinkle in a few chopped nuts, drizzle with melted chocolate, or top with coconut flakes. A tiny pinch of flaky sea salt also brings out amazing flavor.
  4. Chill (Optional): Pop them in the fridge for 10โ€“15 minutes if you want them a little firmer or want to serve them chilled.
  5. Serve & Enjoy: Eat them right away or store in an airtight container in the fridge for a few days.
