>> This recipe is one of my favorite ways to seek in some extra veggies early in the morning (while also enjoying a hearty breakfast).
⭐️ Add some extra fiber by pairing this egg bake with whole grain toast. I personally love to dip the toast in the egg bake 🙂
🌱 As always, make this recipe your own. If you don’t have all of the veggies on hand, just use what’s in your fridge or what you prefer !
Ingredients:
– 1 cup kale
– 2 sausage links (or more if desired) (I used Trader Joes Sausage)
– 1/4 cup red bell pepper
– 1/4 cup red onion
– 4 eggs
– 1/3 cup milk
– 1 tbsp feta cheese
Optional toppings: avocado, green onion, red or black pepper, salt
Steps:
1. Preheat oven to 350F
2. In a sauce pan, add kale, sausage, and veggies on medium heat. Heat ingriedents until kale softens (about 5 min)
3. Transfer heated ingredients into a baking dish. Add eggs on top of veggies.
4. Pour milk over baking dish, then sprinkle on feta cheese.
5. Bake for 22-25 minutes, or until egg is cooked to your desire.
