>> In my opinion, a pot pie is the ultimate comfort food during the holiday season. For this recipe, I kept it simple and used a frozen bag of mixed veggies ~ if you prefer fresh, I included an option below 🙂
🌟RECIPE:
– 1/3 cup unsalted butter
– 1/2 tsp crushed garlic
– 12 oz mixed veggies (frozen, bagged)
••• If using fresh veggies: 1/2 cup chopped carrots, 1/2 cup peas, 1/2 cup corn, 1/2 cup green beans
– 1/3 cup flour
– 1 1/2 cup vegetable broth
– 1/2 cup milk
– 1/2 tsp Italian seasoning
– 1/4 tsp salt
– 1/4 tsp ground black pepper
– 2 Pillsbury Pie Crusts
🌟COOKING INSTRUCTIONS:
1. Preheat the oven to 425F
2. On medium heat, add butter and crushed garlic to a pot
3. Once butter is melted, add mixed veggies, flour, vegetable broth, and milk.Turn heat down to low and cook until pot pie filling has thickened (~10 min)
4. In a pie dish, place 1 pre-made pie crust on the bottom, then add filling
5. Place the other pie crust on top of the filling
6. Cover pot pie with tinfoil and cook for 45 min (remove tinfoil after 40 min)
