•• I’m honestly surprised that I haven’t made this before, it was so fun to put together!! Next time you need to bring a little side dish to a dinner or you want to try something new, give this a shot !

RECIPE:
Base – Tomato Sauce
– 1 can (14.5oz can) crushed or diced tomatoes
– 1/4 tsp Italian seasoning
– 1/4 tsp red pepper flakes
– 1/4 tsp crushed garlic
Layered Vegetables
– 1 yellow squash
– 1 zucchini squash
– 1 eggplant
– 5-7 roma tomatoes
– thyme for seasoning
1. Add all base ingredients to a sauce pan and simmer on low heat until tomatoes soften (about 5-7min)
2. Pour sauce into a casserole or pie dish (a circle dish is best for lining up the sliced veggies, but any shape will work!)
3. Thinly slice yellow squash, zucchini, eggplant, and roma tomatoes. Begin lining baking dish with vegetables, starting on the outer edge and making your way to the middle.
4. Top with thyme and bake at 375F for 45-55 minutes
