• • BOOST PROTEIN: to boost protein for this recipe, add 1 scoop of your favorite protein powder (decrease almond flour from 2/3 cup to 1/3 cup)
• • ADD VITAMINS/MINERALS: these pancakes pair great with sliced apples or sliced bananas ! You can also top with walnuts to add more antioxidants
RECIPE:
– 1.5 cups gluten-free rolled oats (I used @bobsredmill)
– 1.5 cups milk (milk of choice)
– 2/3 cup almond flour (all-purpose flour works here too)
– 3/4 cup pumpkin puree
– 1 egg
– 1/2 tablespoon baking powder
– 1 teaspoon nutmeg
– 1 teaspoon cinnamon
