β’β’β’ Pasta can be a great way to sneak in some extra veggies (like spinach and peas) while still enjoying a common/familiar comfort food
PROTEIN ADD ONS: chickpeas, chicken or salmon
Recipe:
– 6oz pasta (about 1/2 a box) (I used Trader Joes GF pasta)
– 1.5 tbsp olive oil
– 1/2 tsp garlic
– 1 tsp Italian seasoning
– 1 tbsp lemon juice (about 1/2 lemon)
– 1 cup peas (I used frozen, but canned also work great)
– 2 cups fresh spinach
Boil water and cook pasta until done. On medium heat, add olive oil, garlic, Italian seasoning, lemon juice, peas, and spinach. Cover for ~5min, or until spinach is soft. Add cooked pasta and enjoy π
