🦋 You guys, I finally made a dough that almost felt like gluten ! Ever since I was diagnosed with celiac disease, I’ve had to relearn how to bake, and most of the recipes I’ve tried turned out tasting like nothing
🦋 I found this recipe from @40aprons & used it as inspiration for the recipe below 🤍
Recipe For Dough:
• 1 cup warm milk (plant-based works here)
• 2 1/4 tsp of dry yeast
• 1/2 sugar
• 1/2 cup melted butter
• 2 eggs
• 1 tsp apple cider vinegar
• 3 cups 1-to-1 gluten free flour (for baking)
• 2 tsp gluten-free baking powder
• 1 tbsp cinnamon
Recipe For Filling:
• 1 cup brown sugar
• 3 tbsp cinnamon
• 5 tbsp softened butter
For the Frosting:
• 6 tbsp softened butter
• 6 oz cream cheese
• 2 cups powdered sugar
• 2 tsp vanilla
Steps:
1. Active yeast: mix warm milk, sugar, and yeast in a large mixing bowl, letting rest for 5 min
2. Add the rest of the ingredients one by one, mixing as you add
3. Grease a large mixing bowl, place dough in bowl, cover with a towel, and place in the refrigerator for 1 hour
4. While dough is resting, prepare the filling by mixing all ingredients together
5. Roll out dough, then add a thin layer of filling on top of the dough
6. Tightly roll the dough, then cut into desired cinnamon roll sizes
7. Bake at 350 F for 25-27 minutes
8. Prep frosting and add to cinnamon rolls once done 🙂
