Warm, Cozy Pumpkin-Flavored Bars

🤍 Today we are making warm, cozy, pumpkin-flavored bars! These bars can be eaten alone, as a side, or crushed into a topping (today I added a bar to my yogurt). The addition of pumpkin and rolled oats gives these bars a boost of fiber 🌱


Ingredients

  • 1 cup gluten-free rolled oats
  • 1/4 cup almond flour
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup pumpkin puree
  • 1/2 cup milk (I used almond milk, but any milk will work)
  • 2 tbsp maple syrup
  • Optional add-ons: 1/4 cup dairy-free (if needed) chocolate chips, 1/4 cup raisins, 1/4 cup walnuts

Steps

  1. Preheat oven to 350°F (175°C).
  2. Combine all ingredients together in a large bowl until well mixed.
  3. Line a small casserole dish with parchment paper. Slightly grease the pan, then add the mixture into the dish, pressing down so it lays flat.
  4. Bake for 22-25 minutes. Let cool for 10 minutes, then enjoy!

•• Store in the refrigerator for up to 1 week, or freeze for up to two months.
