🤍 Today we are making warm, cozy, pumpkin-flavored bars! These bars can be eaten alone, as a side, or crushed into a topping (today I added a bar to my yogurt). The addition of pumpkin and rolled oats gives these bars a boost of fiber 🌱
Ingredients
- 1 cup gluten-free rolled oats
- 1/4 cup almond flour
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup pumpkin puree
- 1/2 cup milk (I used almond milk, but any milk will work)
- 2 tbsp maple syrup
- Optional add-ons: 1/4 cup dairy-free (if needed) chocolate chips, 1/4 cup raisins, 1/4 cup walnuts
Steps
- Preheat oven to 350°F (175°C).
- Combine all ingredients together in a large bowl until well mixed.
- Line a small casserole dish with parchment paper. Slightly grease the pan, then add the mixture into the dish, pressing down so it lays flat.
- Bake for 22-25 minutes. Let cool for 10 minutes, then enjoy!
