Cauliflower “Alfredo” Sauce

If you are craving a less heavy Alfredo sauce, this one is for you!

The sauce came out with a tint of yellow because I added nutritional yeast for some extra flavor & a B12 boost. If you aren’t a fan of nutritional yeast or want the sauce to look more like classic Alfredo, skip it.

Add-On Ideas

  • Broccoli
  • Chicken
  • Peas
  • Chickpeas

Ingredients

  • 1 box Banza Spaghetti (@eatbanza)
  • 3 tbsp olive oil
  • 2 cups cauliflower florets
  • 1 cup milk of choice (I used @ripplefoods)
  • (Optional) 1/2 cup nutritional yeast
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning

Instructions

  1. Bring a large pot of water to a boil, cook pasta, and set aside.
  2. Add olive oil, cauliflower florets, and milk to a large pan (or pot). Bring to a boil, then simmer and cover for ~10 minutes.
  3. Transfer the sauce to a blender and blend until smooth.
  4. Put the sauce back into the pan and add nutritional yeast (optional), garlic powder, black pepper, and Italian seasoning.
  5. Add cooked pasta to the sauce and enjoy 🙂
